Beskrivelse
This complex merlot has intense flavours of ripe blackberry, red berry and blackcurrant. There are hints of mint and violet aromas including subtle tones of dark chocolate and coffee.
The wine has well integrated French oak, a smooth palate and a long lingering finish.
A deep core of black fruit, grilled herbs and liquorice combines with savoury elements of tar, soy, new leather, and black olives.
Some dusty, sweet eucalyptus notes are drowned out by the wine’s sheer concentration. Pronounced, fine, dry tannins justify aerating the wine, and further bottle ageing of 3-8 years.

In the Vineyard
Vines planted in Estcourt type, weathered topsoil on a layer of granite, above a crumbly clay sub-soil.
About the Harvest
The Merlot was harvested at 24.5° Balling.
In the Cellar
After destemming, the grape must be subjected to cold maceration for 48 hours before fermentation is initiated in open-top stainless-steel tanks.
Regular pump overs and manual punch downs are done during fermentation to maximize flavour extraction.
Post fermentation the wine is left on its skins for an extended 21 days after fermentation to further soften and integrate tannins.
The wine is sent straight to barrel post fermentation in tank.
Wine aged in French oak for 18 months in 1st, 2nd & 3rd fill barrels. (60% new oak)
