Fermentation of the wines in pressed from the skins and then taken to barrel.

Fermentation initiated by inoculating with commercial yeast in 500L open top French oak barrels.
Regular punch downs throughout fermentation ensures maximum colour and flavour extraction.
Grenache used older 2th and 3th fill barrels in order to preserve its fresh red fruit character.
The Shiraz and Mourvedre were both matured in 3rd and 4th fill barrels in order to add a well-balanced, restrained oak character to the wines.
All components fermented separately in 5000L open top tanks to maximize colour and flavour extraction from the skins and only blended before bottling.
